Ham Onion and Cheese Empanadas

Ingredients

Farmland ham x 2-100g Champagne Ham

1 tsp olive oil

2 onions – diced

½ tsp smokey paprika

150g mozzarella cheese cut into cubes

1 tbsp plain flour

3 sheets pre rolled short crust savory pastry – Defrosted

Method

Heat the olive oil in a large frying pan, cook onions till soft & translucent season with salt.

Chop the ham. Cut the mozzarella cheese into cubes.

When the onions have cooled mix the onions and chopped ham, paprika, and pepper together.

Toss the mozzarella cubes in the flour.

Using a bowl or cutter, cut out 4 rounds out of each sheet of pastry.

Divide the ham mixture into the middle of each round. Place 2-3 cubes of cheese on top of the ham mixture.

Brush the edges of the circle with water. Fold over the pastry, use a fork to clamp the sides together or clamp together with your fingers.

Place onto lined baking tray.

Chill in the fridge for 20 minutes before baking.

Bake in a preheated oven at 180 degrees for 20 minutes, till golden brown.
