Croissants with fresh berries, mascarpone and bacon

2-3 tbsp Mascarpone Cheese
2 drops of vanilla extract
A quick and easy brunch using seasonal berries.
- In a cup, add the mascarpone cheese and the vanilla extract and mix.
- Slice the croissant horizontally and toast it in the oven until just toasted and spread the mascarpone cheese all over the bottom side of the croissant.
- Top with the berries and cooked streaky bacon.
- You may choose to drizzle some maple syrup on top to taste.
