Croissants with fresh berries, mascarpone and bacon

Ingredients

Croissants

Streaky Bacon

Fresh berries

2-3 tbsp Mascarpone Cheese

2 drops of vanilla extract

Maple syrup

Method

A quick and easy brunch using seasonal berries.

  1. In a cup, add the mascarpone cheese and the vanilla extract and mix.
  2. Slice the croissant horizontally and toast it in the oven until just toasted and spread the mascarpone cheese all over the bottom side of the croissant.
  3. Top with the berries and cooked streaky bacon.
  4. You may choose to drizzle some maple syrup on top to taste.
