Cheese and Bacon Cob Dip

Ingredients

Cob Loaf 500g

1 small onion, finely chopped

200g Streaky Bacon, diced

250g Cream Cheese, softened

2/3 cup Cream

2/3 cup Sour Cream

1 cup of grated cheese

2 Tablespoons chopped chives

Salt and Pepper or Pepper and Me Man Grind seasoning (you will need 30 turns of the grinder if you use this)

Method

Preheat oven to 180 degrees.

Line a baking tray with baking paper.

Cut top off the cob loaf, this will become the lid. Scoop out the inside of the loaf leaving atleast 1cm edge or thick enough so the dip wont leak through. Tear or roughly chop the remaining bread from the inside of the cob, these will become bread pieces used for dipping.

Heat oil in pan and fry the onion and bacon, cook for 5 mins until bacon is brown and onion softened.

Add chives to bacon and onion mixture, stir in creamed cheese, sour cream and grated cheese. Season with Salt and Pepper or Pepper and Me Man Grind Salt.


Spoon mixture into loaf. Lay the extra bread pieces and the lid around the loaf on the same baking tray. Bake for 20 minutes or until toasted.

Serve warm and enjoy!
