Bacon and Egg Pie


400g Flakey or Puff Pastry (sheets work great)

50g butter

300-400g Streaky Bacon, diced

1 onion, peeled and diced

150g frozen peas

8 eggs

300ml cream

Salt and pepper

100g grated cheese


Preheat oven 180degrees

Grease a 2 litre or similar sized pie dish. Line pastry into pie dish, if you are using pastry block then roll out to ½ cm thick. Prick all over the bottom with a fork numerous times.

Melt butter in saucepan, add bacon and fry until coloured, add onions until soft, then peas. Pour cooked mixture into pastry lined pie dish. Crack 6 eggs evenly on top and then beat remaining eggs with the cream and salt and pepper. Pour liquid mixture over filling. Sprinkle grated cheese over top. Bake in oven until filling is set and pastry golden. 35-40mins.
